The idea  

Our Brownie Energy Balls were already a real eye-catcher and super delicious . But now in summer, we wanted something fresher and lighter . So this time we worked with lemon and white chocolate and developed our Lemon Energy Balls . Fruit fans will also get their money's worth. The best part: you'll have a short amount of work once, but then your fridge will be full of healthy, delicious, and energy-boosting snacks for a whole week. Vegan and high in protein! 

Ingredients  

For the filling:

  • 150 g cashews
  • 3 tablespoons maple syrup (or a sweetener of your choice)
  • 2 tbsp lemon juice
  • lemon zest
  • 1 pinch of salt
  • 5 tbsp oat flour
  • 2 tbsp ProteinAgil 

 

For the glaze: 

  • 1 50 g vegan white chocolate
  • lemon zest 

 

preparation  

  1. Chop the cashews finely and mix with the other ingredients . Depending on the consistency, add a little flour or lemon juice until the mixture is firm enough to form into balls. 

  1. Then form the balls, we formed 13 pieces. 

  1. Place the balls in the freezer for 1-2 minutes to help them retain their shape. 

  1. Then melt the vegan white chocolate and cover the balls with it. Sprinkle with lemon zest for decoration and let it harden in the refrigerator.
