Vegan high-protein banana bread

The idea  

We wanted to develop a recipe that could be baked spontaneously using ingredients everyone has at home. Banana bread is also perfect for using up leftover brown bananas: they're particularly sweet and mushy, making them ideal for baking! Since all of our supplements are vegan, we also focus on using purely plant-based ingredients in our recipes . This is how the idea for vegan high-protein banana bread came about ! 

Ingredients for one banana bread (approx. 10-12 slices)  

For banana bread you need: 

4 ripe bananas (perfect if they already have brown spots) 
150 g spelt flour (or a flour of your choice) 
50 g ProteinAgil (Vegan Protein Powder with DigeZyme ®) 
50 g oat flakes 
2 tsp baking powder 
1 pinch of salt 
½ tsp cinnamon 
70 ml sunflower oil (or another neutral oil alternative) 
100 ml unsweetened soy milk (or another plant-based drink alternative) 
50 g chopped dark chocolate (at least 70% cocoa for extra flavor) 

preparation  

  1. Preheat oven to 180 °C top/bottom heat and grease a loaf pan.  

  1. Mix dry ingredients in a large bowl.  

  1. Mash the bananas with a fork and add them to the dry ingredients along with the oil and plant-based milk.  

  1. Mix well until smooth. Then fold in the chopped chocolate.  

  1. Pour into the pan and bake for about 50 minutes.  

  1. Allow to cool completely – for the perfect “ juicy ” consistency, it’s best to keep it in the fridge!  

Tip: If you want extra crunch, you can add chopped nuts or cocoa nibs !
