Vegan high-protein banana bread

The idea
We wanted to develop a recipe that could be baked spontaneously with ingredients everyone has at home. This banana bread is also perfect for using up leftover brown bananas: they're especially sweet and mushy, ideal for baking! Since all our supplements are vegan, we also prioritize plant -based ingredients in our recipes . That's how the idea for this vegan high-protein banana bread came about !
Ingredients for one banana bread (approx. 10-12 slices)
For banana bread you will need:
4 ripe bananas (perfect if they already have brown spots)
150 g spelt flour (or a type of flour of your choice)
50 g ProteinAgil (Vegan Protein Powder with DigeZyme ®)
50 g rolled oats
2 tsp baking powder
1 pinch of salt
½ tsp cinnamon
70 ml sunflower oil (or another neutral oil alternative)
100 ml unsweetened soy milk (or another plant-based drink alternative)
50g chopped dark chocolate (at least 70% cocoa for extra flavor)
preparation

Preheat oven to 180 °C (top/bottom heat) and grease a loaf pan.

Mix the dry ingredients in a large bowl.

Mash the bananas with a fork and add them to the dry ingredients along with the oil and plant-based milk.

Mix well until a smooth mixture is formed. Then fold in the chopped chocolate.

Pour into the mold and bake for about 50 minutes.

Allow to cool completely – for the perfect “ juicy ” consistency, best done in the refrigerator!
Tip: If you want extra crunch, you can add chopped nuts or cacao nibs !
